Project Description:
The NatBBac project aims to develop new bacteriocins as a natural and safe alternative to synthetic food preservatives. Solutions will be investigated to increase production efficiency through the combination of whey fermentation and its concentration, through recovery techniques such as nanofiltration. A protective film will be developed to replace the current use of synthetic polymers in food packaging.
